Thruba Thasos – Description

They are also known as Zoupes or raisins.
It is a product of protected designation of origin, that is PDO.
Thruba olives of Thassos are known worldwide for their deliciousness.
It is a product exclusively from the olive trees of the island of Thassos. The harvest happens in November.
In Thassos, there is this unique characteristic that the olives wrinkle and turn bitter while still on the tree.
It is then processed with coarse sea salt to preserve its special taste.
It is rich in nutrients and antioxidants and is a perfect appetizer for sea bream.
They are smaller than Super Dry Halkidiki, but have a similar raisin appearance. Their taste is sweet.
It accompanies the Greek salad and is an ideal appetizer for a healthy diet. Also, you can create wonderful combinations with oregano, hot pepper flakes, coriander, rosemary and other Mediterranean herbs.

How to Use & Serving Suggestion

1. First, remove the desired amount of olives from the package, in a deep plate or bowl.
2. Next, rinse with lukewarm water for a few seconds under the tap, and then fill the container with water so that the water level covers all of your olives.
3. We leave them for one to two hours, so that the saltiness goes away.
4. Then, remove the water, and let them dry for a few minutes.
5. Finally, we add some Extra Virgin Olive Oil, mix them so that they go everywhere – and if we want – any other spice of our liking such as oregano, bukovo or some other ingredient such as lemon, vinegar, yogurt, or even soy sauce. Have fun!
